Here is my #1 favorite stuffing. I can actually say “world famous” as we had a missionary spend Thanksgiving dinner with us and he raved over this stuffing. I gave him the recipe and he brought it away with him back to the mission fields. It was then he realized he couldn’t get half the ingredients where he was a missionary.
The Salty Old Dog's World Famous Sausage Stuffing

Ingredients
- 9 cups of bread cubes (see notes)
- 2 stalks of celery; chopped with the leaves
- 1 large onion chopped
- 1 lb loose Italian sweet sausage (see notes)
- 1 lb of baby bella mushrooms sliced thick
- 2 Tbs Bell's Poultry Seasoning
- ½ cup fresh parsley; minced
- 1 Tbs kosher salt
- ½ tsp fresh ground pepper
- 3 large eggs scrambled
- 3 cups of chicken stock; preferably home made
Instructions
Day before
- Brown the sausage in a skillet
- Add the celery and onion and continue to cook until onions are glassy
- Put away in the refrigerator until the day of cooking the turkey
Final assembly
- Put the bread cubes, sausage mixture, mushrooms and seasonings in a large work bowl.
- Add the eggs
- Slowly add the stock while mixing the stuffing. You want the bread cubes moist but not sopping wet.
- Stuff in the bird's body cavity and roast accordingly
Notes
If for some reason you cannot get loose Italian sausage you can take link sausage and remove the casing. It's a bit of work but worth it.
