Not quite sure how in heck this recipe became part of my family’s repertoire. We certainly don’t have Southern roots although my dad did spend a bit of time living in Baltimore and that perhaps is the vector this recipe comes from.
I am a huge fan of corn muffins, corn bread, corn <fill in the blank> meaning darn near anything made from corn meal. My prefered liquor is even made from corn (Bourbon).
- 1½ Cups Corn Meal
- 1½ Cups of all purpose flour
- 2 tsp baking powder
- 2 eggs
- 1½ cup of milk
- ½ cup melted shortening
- 1 cup of sugar
- Preheat oven to 350F
- Put all ingredients in a bowl and combine well
- Pour into a well greased square pan or well greased muffin tins.
- Bake 15 minutes ina 350F oven
This is great for breakfast or with chile.
