Corn Pone or Corn Muffins

Not quite sure how in heck this recipe became part of my family’s repertoire. We certainly don’t have Southern roots although my dad did spend a bit of time living in Baltimore and that perhaps is the vector this recipe comes from.

I am a huge fan of corn muffins, corn bread, corn <fill in the blank> meaning darn near anything made from corn meal.  My prefered liquor is even made from corn (Bourbon).

  • 1½ Cups Corn Meal
  • 1½ Cups of all purpose flour
  • 2 tsp baking powder
  • 2 eggs
  • 1½ cup of milk
  • ½ cup melted shortening
  • 1 cup of sugar
  1. Preheat oven to 350F
  2. Put all ingredients in a bowl and combine well
  3. Pour into a well greased square pan or well greased muffin tins.
  4. Bake 15 minutes ina 350F oven

This is great for breakfast or with chile.
