German Potato Salad

Someone asked on Quora for a list of good side dishes to have at a cookout.  First recipe that leapt into my mind was German Potato Salad since it does not use mayonnaise and less likely to spoil being outdoors for a long time.  It is also my favorite type of potato salad and this is a recipe from my mom.

My favorite type of salad
  • 2 lbs small white potatoes (best are Maine potatoes if you can find them)
  • 1 tsp salt
  • ½ cup diced bacon
  • 1½ tsp flour
  • 4 tsp sugar
  • ⅓ cup cider vinegar
  • 1 Tbsp salt
  • ¼ tsp black pepper
  • ½ cup water
  • ¼ cup minced onion
  • 2 Tbsp minced fresh parsley
  • 1 tsp celery seed
  • ½ cup sliced radishes
  1. Boil potatoes in their jackets until a fork will pierce them easily with ½ tsp salt added to the water. This should take about 35 minutes.
  2. Drain and peel potatoes and cut into ¼ inch slices and put in a bowl
  1. In a small skillet cook the bacon until crisp. Add onion and saute until just brown.
  2. In another bowl mis flour, sugar, 1Tbs salt and pepper. Stir in the vinegar and water until smooth
  3. Add to bacon and simmer until to desired thickness
  4. Add this dressing to the potatoes
  1. Add in minced onion, parsley, celery seeds and sliced radish.
  2. Toss lightly and garnish with celery leaves if desired.
