A favorite of mine when I was growing up it was my mom’s recipe and I took it with me when I got married to my wife in 1977. My wife occasionally makes it but perennially I’m the one that cooks this. When I was young I was known for eating an entire batch by myself (before I got married) and burning it off later riding my bike long distance.
Chili Porcupine Meatballs

Ingredients
- 1 lb ground beef
- ½ cup uncooked rice
- 1 tsp salt
- ¼ tsp pepper
- 2 Tbsp butter
- 2 cans (5 oz each) tomato sauce
- 1 cup water
- 1 tsp chili powder (more if desired, sometimes I use chipotle chili power)
- ½ tsp cumin
Instructions
- Mix first 5 ingredients
- Shape into 16 to 20 balls
- Brown in butter over medium heat in a skillet
- Add rest of the ingredients
- Cover and simmer for 45 minutes
