Chili Porcupine Meatballs

A favorite of mine when I was growing up it was my mom’s recipe and I took it with me when I got married to my wife in 1977. My wife occasionally makes it but perennially I’m the one that cooks this.  When I was young I was known for eating an entire batch by myself (before I got married) and burning it off later riding my bike long distance.

Chili Porcupine Meatballs

Serves: 4 servings
  • 1 lb ground beef
  • ½ cup uncooked rice
  • 1 tsp salt
  • ¼ tsp pepper
  • 2 Tbsp butter
  • 2 cans (5 oz each) tomato sauce
  • 1 cup water
  • 1 tsp chili powder (more if desired, sometimes I use chipotle chili power)
  • ½ tsp cumin
  1. Mix first 5 ingredients
  2. Shape into 16 to 20 balls
  3. Brown in butter over medium heat in a skillet
  4. Add rest of the ingredients
  5. Cover and simmer for 45 minutes
