I found a way to make turkey actually taste good.
Ingredients
- Head of Garlic with top cut off
- 3 Bay Leaves
- ⅓ cup of pickling spices (yes Bay Leaves and Pickling spice)
- ¼ cup of Apple Cider vineagar
- 1 Gallon Apple Cider
- 1 cup salt
- 2 cups Brown Sugar
- 2 Oranges Sliced
- 2 Lemons Sliced
- 5 lbs of ice
Instructions
- Pour the cider into a large pot and bring to a boil
- Add the rest of the ingredients other than the ice
- Boil until salt and sugar have been absorbed by the cider
- Turn the heat off and add ice to bring the temperature of the brine below 60F
- Place your turkey (or whatever) into a container large enough to contain both the bird and the brine.
- Keep turkey submerged by placing a plate and some weight over it (I use a couple of cleaned bricks wrapped in plastic wrap)
- Brine for three days
