Swiss Steak in foil

Not sure of the origins of this recipe but eating this goes back to some of my earliest memories.  As a matter of fact until I became a teenager I thought this was what steak was until I had aged New York Strip steaks at a friend of the family’s cookout one Independence Day.

Serves: 5 to 6 servings
  • 1 cup of catsup
  • ¼ cup of flour
  • 2 pounds of round steak
  • 1 large onion sliced
  • 2 tablespoons lemon juice
  1. Preheat oven to 450F
  2. Tear off a five foot length of aluminum foil
  3. fold in half to double.
  4. Combine the catsup and flour
  5. Spoon half of mixture into center of foil
  6. Place steak atop mixture
  7. Season with salt and pepper
  8. Cover meat with slices of onion
  9. Cover with remaining catsup mixture
  10. Sprinkle with lemon juice
  11. Fold foil over sealing the edges securely
  12. Place in shallow baking pan
  13. Bake in 450F oven for 90 minutes.
  14. Remove foil
  15. Cut steak into pieces
